So we have been eating quite well lately. Jess already posted about our lasagna that we made wit hour own tomato sauce, pasta and home made cheeses last week. I really felt it was an accomplishment to grow and make so much with our own food.
Last night we made ravioli with ricotta cheese that Jess made and pasta made from our hens eggs. To be honest Jess did all the hard work and I just helped with the sauce at the end. Last year we made a few small batches of garlic scape and walnut pesto and froze them. I combined them with butter and served them over the ravioli. It was delicious and looked pretty good as well.
We also made a batch of Lemon Ricotta pancakes made famous by Hell's Kitchen in Minneapolis.
Ours turned out quite well but still are no threat to the originals. You really should stop in and try them if you have the opportunity. We served them up with a few slices of Lorentz bacon and it was wonderful.
In other news I have adjusted the blog to a more spring like look and added a twitter feed for things that I would like to share about the farm but are to small in themselves to make a good post.
Other than that Spring is in full swing around here. I took down the snow fence and almost all of the snow has melted from the yard. The sun is heating the garden beds and I hope to be planting frost hardy crops by possibly this weekend.

Oh man, that does look good and you do indeed eat quite well.
It was also nice to have several of the ravioli that we froze and can eat at a later date. The ravioli was filled with our homemade ricotta mixed with fresh thyme and oregano and a small nubbin of mozzarella. Very tasty!
I have never been to Hell's Kitchen (nor did I know it was here! - how embarrassing) but I will now have to go and order those pancakes because I am a pancake fanatic and those look really good! And your bacon looks fabulous too.
Always nice to hear about others in the midwest who eat well, especially from things you grew yourself, yes even here in the midwest! It can be done =)

Mr. H.-Thanks we do eat quite well here. Food is probably the most common point of interest for both me and my wife. I am determined that we will never be hungry. Also finished watching that documentary you pointed me to. Interesting but I could never live that way. I am too social a creature.Also who knew rabbits were so easy to skin?
Jessica- This year we may have to make and freeze even more ravioli with our own herbs.
Aimee-The Hell's Kitchen in Minneapolis is not the same as the one on the show. I am not sure but I think Mitch Omer had the name before Gordan Ramsey had his show. My wife bought me his cookbook for Christmas and Wow he has a great back story. Also they make perhaps the best breakfasts in all of the twin cities.
